  • 3 large eggs (room temperature)
  • 1/2 cup sugar (or low-carb sweetener)
  • 1/2 cup melted butter (or coconut oil for dairy-free)
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
  2. In a large bowl, whisk together the eggs, sugar, melted butter, and vanilla extract until smooth.
  3. In another bowl, stir together the almond powder, baking powder, and salt.
  4. Gradually fold the dry mixture into the wet ingredients. Mix just until combined—don’t overmix.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  8. Optionally, top with powdered sugar, whipped cream, or fresh berries before serving.

Notes

  • Use fine almond powder for the smoothest texture.
  • For a lemon variation, add 1 tbsp lemon zest and 1 tbsp juice.
  • For a chocolate twist, add 1/3 cup cocoa powder and 1/2 cup dark chocolate chips.
