- 2 cups almond powder (finely ground, blanched)
- 3 large eggs (room temperature)
- 1/2 cup sugar (or low-carb sweetener)
- 1/2 cup melted butter (or coconut oil for dairy-free)
- 1 tsp baking powder
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
- In a large bowl, whisk together the eggs, sugar, melted butter, and vanilla extract until smooth.
- In another bowl, stir together the almond powder, baking powder, and salt.
- Gradually fold the dry mixture into the wet ingredients. Mix just until combined—don’t overmix.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Optionally, top with powdered sugar, whipped cream, or fresh berries before serving.
Notes
- Use fine almond powder for the smoothest texture.
- For a lemon variation, add 1 tbsp lemon zest and 1 tbsp juice.
- For a chocolate twist, add 1/3 cup cocoa powder and 1/2 cup dark chocolate chips.
