Ingredients
1 lb chicken tenders
2 medium apples, sliced (Honeycrisp or Granny Smith recommended)
1/4 cup honey
2 tbsp soy sauce (or tamari for gluten-free)
1 tbsp apple cider vinegar
2 garlic cloves, minced
2 tbsp olive oil
Salt and pepper, to taste
Optional: Fresh thyme or rosemary for garnish
Instructions
In a bowl, whisk together honey, soy sauce, apple cider vinegar, garlic, salt, and pepper.
Place chicken tenders in a shallow dish and pour the marinade over them. Marinate for at least 30 minutes.
Heat olive oil in a skillet over medium heat. Remove chicken from marinade and sear on both sides until golden brown. Set aside.
Add apple slices and remaining marinade to the skillet. Simmer for 5-7 minutes until apples soften and the sauce thickens.
Return chicken to the skillet and coat with the glaze. Cook for 2-3 minutes more.
Garnish with thyme or rosemary and serve warm.
