Ingredients

  • 1 lb chicken tenders
  • 2 medium apples, sliced (Honeycrisp or Granny Smith recommended)
  • 1/4 cup honey
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp apple cider vinegar
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Optional: Fresh thyme or rosemary for garnish

Instructions

  • In a bowl, whisk together honey, soy sauce, apple cider vinegar, garlic, salt, and pepper.
  • Place chicken tenders in a shallow dish and pour the marinade over them. Marinate for at least 30 minutes.
  • Heat olive oil in a skillet over medium heat. Remove chicken from marinade and sear on both sides until golden brown. Set aside.
  • Add apple slices and remaining marinade to the skillet. Simmer for 5-7 minutes until apples soften and the sauce thickens.
  • Return chicken to the skillet and coat with the glaze. Cook for 2-3 minutes more.
  • Garnish with thyme or rosemary and serve warm.

Notes

  • Use fresh, organic apples for the best flavor.
  • Substitute boneless, skinless chicken thighs if desired.
  • Pair with mashed sweet potatoes or a crisp green salad for a complete meal.
