- 3 ripe bananas, mashed (about 1½ cups)
- 3 large eggs
- 1/3 cup vegetable oil (or substitute with banana)
- 1/2 cup milk (or almond milk for dairy-free)
- 1 tsp vanilla extract
Optional:
- 1/2 tsp cinnamon
- 1 cup chocolate chips or chopped nuts
- 1 tsp baking powder (for extra rise)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish or two 8-inch round pans.
- In a large bowl, mash the bananas. Add eggs and mix until combined.
- Stir in oil and milk.
- Add cake mix and vanilla extract. Beat on medium speed for 2 minutes until smooth.
- Fold in optional mix-ins like cinnamon, chocolate chips, or nuts.
- Pour the batter into the prepared pan(s) and spread evenly.
- Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Cool completely before frosting or serving.
Notes
- You can substitute oil with mashed banana for a lower-fat version.
- Replace eggs with 1/4 cup mashed banana per egg for an egg-free option.
- For extra lift, add 1 tsp baking powder.
- Excellent when topped with cream cheese frosting or banana glaze.
