Ingredients

  • 1 lb beef chuck or stew meat, cubed
  • 1 cup pearl barley
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 8 cups beef broth
  • 2 tbsp tomato paste
  • 2 bay leaves
  • 1 cup sliced mushrooms (optional)
  • 1 potato, peeled and diced (optional)
  • Salt, pepper, and dried thyme to taste

Instructions

  • Heat a large pot or Dutch oven over medium-high heat. Add the beef cubes and sear until browned. Remove and set aside.
  • In the same pot, sauté the onions, garlic, carrots, and celery until softened and fragrant.
  • Stir in the tomato paste, coating the vegetables evenly.
  • Return the beef to the pot and add the beef broth, pearl barley, bay leaves, and seasonings. Stir to combine.
  • Bring to a boil, then reduce heat to a simmer. Cover and cook for 45–60 minutes, stirring occasionally, until the barley is tender and the beef is cooked through.
  • Add optional ingredients like mushrooms or potatoes, if desired, and cook for an additional 15 minutes.
  • Remove bay leaves before serving. Taste and adjust seasoning with salt and pepper.
