- 1 lb beef chuck or stew meat, cubed
- 1 cup pearl barley
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, diced
- 3 garlic cloves, minced
- 8 cups beef broth
- 2 tbsp tomato paste
- 2 bay leaves
- 1 cup sliced mushrooms (optional)
- 1 potato, peeled and diced (optional)
- Salt, pepper, and dried thyme to taste
Instructions
- Heat a large pot or Dutch oven over medium-high heat. Add the beef cubes and sear until browned. Remove and set aside.
- In the same pot, sauté the onions, garlic, carrots, and celery until softened and fragrant.
- Stir in the tomato paste, coating the vegetables evenly.
- Return the beef to the pot and add the beef broth, pearl barley, bay leaves, and seasonings. Stir to combine.
- Bring to a boil, then reduce heat to a simmer. Cover and cook for 45–60 minutes, stirring occasionally, until the barley is tender and the beef is cooked through.
- Add optional ingredients like mushrooms or potatoes, if desired, and cook for an additional 15 minutes.
- Remove bay leaves before serving. Taste and adjust seasoning with salt and pepper.
