- 1 lb ribeye or sirloin steak
- 8 oz fettuccine or penne pasta
- 2 tbsp olive oil
- 1 cup heavy cream (or tomato sauce)
- 2 garlic cloves, minced
- 1 cup grated Parmesan cheese
- 1 tsp dried thyme or rosemary
- Salt and pepper to taste
- Fresh parsley or basil for garnish
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions. Reserve 1 cup of pasta water and drain the rest.
- Season the steak with salt and pepper. Heat olive oil in a skillet over high heat and sear the steak for 3-4 minutes per side until your desired doneness. Let it rest for 5 minutes, then slice thinly.
- In the same skillet, reduce heat to medium and sauté minced garlic and dried thyme until fragrant.
- Add reserved pasta water to deglaze the pan, then stir in heavy cream or tomato sauce. Simmer for 5 minutes until thickened.
- Add grated Parmesan cheese and stir until melted and creamy.
- Toss the pasta with the sauce until fully coated, then top with sliced steak.
- Garnish with fresh parsley or basil before serving.

- For extra flavor, add a splash of red wine while deglazing the pan.
- Substitute heavy cream with Greek yogurt for a lighter sauce.
