  • 8 oz fettuccine or penne pasta
  • 2 tbsp olive oil
  • 1 cup heavy cream (or tomato sauce)
  • 2 garlic cloves, minced
  • 1 cup grated Parmesan cheese
  • 1 tsp dried thyme or rosemary
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish

Instructions

  • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions. Reserve 1 cup of pasta water and drain the rest.
  • Season the steak with salt and pepper. Heat olive oil in a skillet over high heat and sear the steak for 3-4 minutes per side until your desired doneness. Let it rest for 5 minutes, then slice thinly.
  • In the same skillet, reduce heat to medium and sauté minced garlic and dried thyme until fragrant.
  • Add reserved pasta water to deglaze the pan, then stir in heavy cream or tomato sauce. Simmer for 5 minutes until thickened.
  • Add grated Parmesan cheese and stir until melted and creamy.
  • Toss the pasta with the sauce until fully coated, then top with sliced steak.
  • Garnish with fresh parsley or basil before serving.
