These Berry Cheesecake Bites are creamy, fruity, and perfectly portioned. Ideal for parties, holidays, or when you’re craving a sweet, mini dessert!

Ingredients

For the Crust:

  • 7 graham cracker sheets (about 1 cup crumbs)
  • 4 tablespoons unsalted butter, melted
  • 1 tablespoon granulated sugar
  • ⅛ teaspoon salt

For the Cheesecake Filling:

  • 12 oz block-style cream cheese, softened
  • ⅓ cup granulated sugar
  • ¼ cup plain or vanilla yogurt (or sour cream)
  • ½ teaspoon vanilla extract
  • 1 large egg, room temperature

For the Berry Swirl:

  • ¾ cup fresh or frozen berries (blueberries, strawberries, etc.)
  • 1 tablespoon granulated sugar
  • 1 teaspoon lemon juice

For the Topping (Optional):

  • ¾ cup berries
  • 1½ tablespoons sugar
  • 1 tablespoon water
  • 1 teaspoon cornstarch mixed with 2 teaspoons water

Instructions

  1. Preheat oven to 325°F and line a 12-cup muffin pan with liners.
  2. Make the crust: Combine graham cracker crumbs, melted butter, sugar, and salt. Press ~1 tbsp into each liner. Bake 5 minutes.
  3. Prepare the filling: Beat cream cheese and sugar until smooth. Add yogurt and vanilla, then the egg—mixing gently.
  4. Make berry swirl: Cook berries, sugar, and lemon juice over medium heat for 5 minutes. Blend or mash, cool, and swirl into filling.
  5. Assemble: Spoon 1.5 tbsp filling over each crust. Swirl in berry mixture.
  6. Bake for 15–17 minutes until set. Cool 45 mins at room temp, then chill 3+ hours in fridge.
  7. Add topping: Cook berries, sugar, and water. Add cornstarch slurry. Cool, then spoon over chilled bites before serving.

Notes

  • Store in an airtight container for up to 5 days.
  • Freeze without topping for up to 2 months.
  • For no-bake version: Skip the egg, use ¼ cup whipped topping instead, and chill overnight to set.
  • Vegan version: Use dairy-free cream cheese, yogurt, and an egg substitute (like flax egg).
  • Gluten-free version: Use GF graham crackers or cookies.
