Ingredients
1 lb chicken breast, cut into cubes
2 cups uncooked penne pasta
2 cups chicken broth
1/2 cup sun-dried tomatoes (chopped)
2 cups baby spinach
4 oz cream cheese
1 tbsp olive oil
1 tsp Italian seasoning
Salt and pepper, to taste
Optional: grated Parmesan for topping
Instructions
Turn Ninja Foodi to sauté mode. Add olive oil and cubed chicken. Sauté until lightly browned (about 4–5 minutes).
Cancel sauté mode. Add uncooked pasta, chicken broth, and sun-dried tomatoes. Stir to distribute evenly.
Close the lid and set to Pressure Cook on high for 6 minutes. Make sure the valve is set to “seal.”
When the time is up, perform a quick release. Open the lid and stir in cream cheese until melted.
Add spinach and stir until wilted and creamy.
Serve hot, topped with grated Parmesan if desired.
Notes
You can use gluten-free pasta if needed.
Add mushrooms, peas, or roasted red peppers for extra veggies.
Easily double for meal prep or larger families.
For extra creaminess, add 1/4 cup heavy cream after pressure cooking.
