Description
A rich and creamy Tuscan-style chicken pasta made entirely in the Ninja Foodi. Perfect for busy weeknights, it’s a one-pot, family-friendly meal packed with flavor.

- 1 lb chicken breast, cut into cubes
- 2 cups uncooked penne pasta
- 2 cups chicken broth
- 1/2 cup sun-dried tomatoes (chopped)
- 2 cups baby spinach
- 4 oz cream cheese
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- Optional: grated Parmesan for topping
Instructions
- Turn Ninja Foodi to sauté mode. Add olive oil and cubed chicken. Sauté until lightly browned (about 4–5 minutes).
- Cancel sauté mode. Add uncooked pasta, chicken broth, and sun-dried tomatoes. Stir to distribute evenly.
- Close the lid and set to Pressure Cook on high for 6 minutes. Make sure the valve is set to “seal.”
- When the time is up, perform a quick release. Open the lid and stir in cream cheese until melted.
- Add spinach and stir until wilted and creamy.
- Serve hot, topped with grated Parmesan if desired.
Notes
- You can use gluten-free pasta if needed.
- Add mushrooms, peas, or roasted red peppers for extra veggies.
- Easily double for meal prep or larger families.
- For extra creaminess, add 1/4 cup heavy cream after pressure cooking.
