This moist and vibrant Jello poke cake is the perfect retro-inspired dessert for any occasion. Made with fluffy white cake, fruity gelatin, and whipped topping, it’s easy to customize for holidays, birthdays, or just a fun baking day.

Ingredients

  • 1 box white cake mix (or homemade vanilla cake equivalent)
  • 1 box (3 oz) flavored Jell-O (e.g., strawberry, cherry, or lime)
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 tub whipped topping (Cool Whip or homemade)
  • Optional: Fresh fruit (strawberries, blueberries, or raspberries)
  • Optional: Sprinkles or crushed nuts for topping

Instructions

  1. Bake the white cake according to package directions in a 9×13-inch pan. Let cool for 20 minutes.
  2. Using the handle of a wooden spoon or straw, poke holes about 1 inch apart all over the surface of the cake.
  3. In a medium bowl, dissolve the Jello in 1 cup boiling water. Stir until fully dissolved, then mix in 1/2 cup cold water.
  4. Slowly pour the Jello mixture over the cake, making sure it fills the holes evenly.
  5. Refrigerate the cake for at least 4 hours, or overnight, until the Jello is fully set.
  6. Spread whipped topping evenly over the top.
  7. Garnish with fresh fruit, sprinkles, or nuts as desired.
  8. Slice and serve chilled!
