Ingredients

  • 2 cups cashews (raw or roasted, unsalted)
  • ½ cup granulated sugar
  • 2 tablespoons butter
  • 1 teaspoon ground cinnamon (optional)
  • 1 teaspoon vanilla extract (optional)

Instructions

  • Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
  • Melt sugar and butter in a medium saucepan over medium heat, stirring until the mixture bubbles and caramelizes.
  • Add cashews to the saucepan, stirring to coat them evenly in the sugar mixture.
