Instructions
- Peel and shred the carrots using a box grater or food processor.
- Core and chop the apples into small cubes or thin matchsticks.
- Toss the chopped apples in a bit of lemon juice to prevent browning.
- In a small bowl, whisk together lemon juice, vinegar, olive oil, honey (if using), salt, and pepper.
- In a large mixing bowl, combine carrots and apples. Pour the dressing over the top and toss gently until well coated.
