This refreshing Carrot Apple Salad combines crunchy carrots, crisp apples, and a tangy lemon vinaigrette for a light, healthy side dish ready in just 15 minutes. Perfect for picnics, meal prep, or a bright addition to any dinner plate.

Ingredients

  • 2 large carrots, peeled and shredded
  • 2 medium apples (Honeycrisp or Gala), cored and chopped
  • 2 tablespoons lemon juice (plus extra for tossing apples)
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons olive oil or safflower oil
  • 1 teaspoon honey or maple syrup (optional)
  • Salt and black pepper, to taste
  • Fresh parsley or mint (optional garnish)

Instructions

  1. Peel and shred the carrots using a box grater or food processor.
  2. Core and chop the apples into small cubes or thin matchsticks.
  3. Toss the chopped apples in a bit of lemon juice to prevent browning.
  4. In a small bowl, whisk together lemon juice, vinegar, olive oil, honey (if using), salt, and pepper.
  5. In a large mixing bowl, combine carrots and apples. Pour the dressing over the top and toss gently until well coated.
  6. Chill in the refrigerator for 10 minutes, garnish with herbs, and serve.
