- 2½ tsp baking powder
- ½ tsp salt
- 1 cup unsalted butter (softened)
- 1¾ cups granulated sugar
- 4 large eggs
- 1 tbsp vanilla extract
- 1 cup whole milk or buttermilk
For the Chantilly Cream:
- 1½ cups heavy whipping cream
- 8 oz mascarpone cheese
- 4 oz cream cheese (optional)
- 1 cup powdered sugar
- 1 tsp vanilla extract
- Optional: almond extract (¼ tsp)
For the Fruit Filling:
- 1 cup sliced strawberries
- ½ cup blueberries
- ½ cup raspberries
- 1 tsp lemon juice
- 1 tsp sugar
- Optional Cake Soak Syrup:
- ½ cup water
- ½ cup sugar
- 1 tsp vanilla or almond extract
Instructions
Bake the sponge layers, make Chantilly cream, prepare fruits, soak cake, layer with cream & fruit, frost, decorate, and chill.
Notes
- Use buttermilk instead of milk for extra moistness.
- For a dairy-free version, use plant-based cream and cheese alternatives.
