Description

  • ½ tsp salt
  • 1 cup unsalted butter (softened)
  • 1¾ cups granulated sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1 cup whole milk or buttermilk

For the Chantilly Cream:

  • 1½ cups heavy whipping cream
  • 8 oz mascarpone cheese
  • 4 oz cream cheese (optional)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • Optional: almond extract (¼ tsp)

For the Fruit Filling:

  • 1 cup sliced strawberries
  • ½ cup blueberries
  • ½ cup raspberries
  • 1 tsp lemon juice
  • 1 tsp sugar
  • Optional Cake Soak Syrup:
  • ½ cup water
  • ½ cup sugar
  • 1 tsp vanilla or almond extract

Instructions

Bake the sponge layers, make Chantilly cream, prepare fruits, soak cake, layer with cream & fruit, frost, decorate, and chill.

Notes

  • Use buttermilk instead of milk for extra moistness.
