- 4 cups cooked, shredded chicken
- 6 cups crumbled cornbread (or bread cubes)
- 1½ cups chicken broth (more if needed)
- 1 medium onion, chopped
- 2 celery stalks, diced
- 2 eggs, beaten
- ½ cup unsalted butter
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried sage (or 1 tbsp fresh)
- 1 tsp poultry seasoning
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, melt butter over medium heat. Sauté onion and celery until soft (5–7 minutes).
- In a large mixing bowl, combine cornbread, shredded chicken, sautéed vegetables, and seasonings.
- Whisk eggs, then pour into the bowl along with chicken broth. Stir until evenly combined and moist, but not soupy.
- Transfer the mixture into a greased 9×13-inch baking dish and spread evenly.
- Bake uncovered for 40–50 minutes, or until golden brown on top.
- Let rest for 10 minutes before serving.
Notes
- Use day-old or toasted cornbread for best texture.
- Add a can of cream of chicken soup for a creamier variation.
- Leftovers can be stored in the fridge for up to 4 days or frozen for up to 3 months.
- For a lighter version, substitute butter with olive oil and use egg whites.
