This chicken tortellini soup is the ultimate comfort food—easy to make, loaded with flavor, and perfect for cozy family dinners or meal prep.

Ingredients

  • 2 tbsp olive oil or butter
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 celery stalks, chopped
  • 2 medium carrots, diced
  • 4 cups low-sodium chicken broth
  • 2 cups cooked, shredded chicken (rotisserie works great)
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 9 oz cheese tortellini (fresh or frozen)
  • 2 cups fresh spinach or kale, chopped
  • ½ cup heavy cream (optional)
  • Parmesan cheese and fresh parsley for garnish

Instructions

  • Heat olive oil or butter in a large pot over medium heat. Add onion, garlic, celery, and carrots. Sauté until softened, about 5 minutes.
  • Pour in chicken broth and add shredded chicken, thyme, bay leaf, salt, and pepper. Bring to a simmer and cook for 10 minutes.
  • Add tortellini to the pot and cook until tender, following package instructions (about 5–7 minutes).
  • Stir in spinach or kale and let it wilt, about 2 minutes.
  • For a creamy version, add heavy cream and stir until combined.
  • Remove bay leaf before serving. Ladle soup into bowls and garnish with Parmesan cheese and fresh parsley.
