- 3 garlic cloves, minced
- 2 celery stalks, chopped
- 2 medium carrots, diced
- 4 cups low-sodium chicken broth
- 2 cups cooked, shredded chicken (rotisserie works great)
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 9 oz cheese tortellini (fresh or frozen)
- 2 cups fresh spinach or kale, chopped
- ½ cup heavy cream (optional)
- Parmesan cheese and fresh parsley for garnish
Instructions
- Heat olive oil or butter in a large pot over medium heat. Add onion, garlic, celery, and carrots. Sauté until softened, about 5 minutes.
- Pour in chicken broth and add shredded chicken, thyme, bay leaf, salt, and pepper. Bring to a simmer and cook for 10 minutes.
- Add tortellini to the pot and cook until tender, following package instructions (about 5–7 minutes).
- Stir in spinach or kale and let it wilt, about 2 minutes.
- For a creamy version, add heavy cream and stir until combined.
- Remove bay leaf before serving. Ladle soup into bowls and garnish with Parmesan cheese and fresh parsley.

- To make it dairy-free, skip the cream or use coconut milk as a substitute.
