- 1 cup coconut milk
- 2 tbsp soy sauce or coconut aminos
- 2 garlic cloves, minced
- 1 tbsp ginger, minced
- 1 tbsp lime juice
- 1 tbsp cooking oil
- Optional garnishes: cilantro, chopped peanuts, red chili flakes
Instructions
- Heat oil in a skillet over medium heat. Sear the chicken until golden brown and cooked through. Remove and set aside.
- In the same skillet, sauté garlic and ginger until fragrant.
- Add peanut butter, coconut milk, soy sauce, and lime juice. Stir until the sauce is smooth and creamy.
- Return the chicken to the skillet, ensuring it’s coated with the sauce.
- Simmer for 10-15 minutes, stirring occasionally, until the flavors meld together.
- Serve over rice or with steamed vegetables. Garnish with cilantro, peanuts, or chili flakes if desired.

- For a nut-free version, use sunflower seed butter.
