A creamy and flavorful chicken with peanut butter recipe that’s perfect for lunch. Easy to make, rich in protein, and incredibly delicious.

Ingredients

  • 1 lb chicken thighs or breasts, cut into bite-sized pieces
  • 1/2 cup peanut butter (creamy or chunky)
  • 1 cup coconut milk
  • 2 tbsp soy sauce or coconut aminos
  • 2 garlic cloves, minced
  • 1 tbsp ginger, minced
  • 1 tbsp lime juice
  • 1 tbsp cooking oil
  • Optional garnishes: cilantro, chopped peanuts, red chili flakes

Instructions

  • Heat oil in a skillet over medium heat. Sear the chicken until golden brown and cooked through. Remove and set aside.
  • In the same skillet, sauté garlic and ginger until fragrant.
  • Add peanut butter, coconut milk, soy sauce, and lime juice. Stir until the sauce is smooth and creamy.
  • Return the chicken to the skillet, ensuring it’s coated with the sauce.
  • Simmer for 10-15 minutes, stirring occasionally, until the flavors meld together.
  • Serve over rice or with steamed vegetables. Garnish with cilantro, peanuts, or chili flakes if desired.

Notes

  • For a nut-free version, use sunflower seed butter.
  • Adjust spice levels by adding chili paste or curry powder.
  • Stores well in the refrigerator for up to 3 days.
