- 1 scoop cookie butter protein powder
- 1/2 cup oat flour
- 1 egg (or flaxseed substitute for vegan option)
- 1/2 cup unsweetened almond milk
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1 tsp coconut oil (for cooking)
Instructions
- In a medium bowl, whisk together the cookie butter protein powder, oat flour, baking powder, and cinnamon.
- In another bowl, mix the almond milk, egg (or flaxseed substitute), and vanilla extract until combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until a smooth batter forms.
- Heat a non-stick skillet over medium heat and lightly coat with coconut oil.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes or until bubbles appear on the surface, then flip and cook for another 1-2 minutes.
- Repeat with the remaining batter.
- Serve warm with fresh fruit, sugar-free syrup, or your favorite toppings.
Notes
- For a vegan option, use a flaxseed egg substitute (1 tbsp ground flaxseed + 3 tbsp water).
- Oat flour can be made by blending rolled oats in a food processor.
