- 1 lb Italian sausage (mild or spicy)
- 2 tbsp olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 2 cups fresh spinach (or kale)
- 1 tsp dried thyme
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp black pepper
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Brown the Italian sausage, breaking it into crumbles. Remove and set aside.
- In the same pot, sauté onions and garlic until fragrant, about 2 minutes. Add carrots and celery, cooking until slightly softened.
- Pour in the chicken broth, heavy cream, and grated parmesan. Stir until well combined.
- Return the cooked sausage to the pot and add spinach, thyme, salt, and pepper.
- Simmer on low heat for 15–20 minutes, allowing the flavors to meld together.
- Serve hot, garnished with fresh parsley and additional parmesan if desired.

- For a lighter option, substitute heavy cream with coconut milk or Greek yogurt.
- Add red chili flakes for a spicy twist.
