Ingredients

  • 3 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 2 cups fresh spinach (or kale)
  • 1 tsp dried thyme

Instructions

  • Heat olive oil in a large pot over medium heat. Brown the Italian sausage, breaking it into crumbles. Remove and set aside.
