Ingredients

- 2 cups peeled & diced cucumber
- ½ cup fresh lemon juice
- 4 cups water (still or sparkling)
- ¼ cup maple syrup or honey
- Mint leaves (optional)
- Ice cubes
Instructions
- Blend cucumbers with ½ cup water until smooth.
- Strain through sieve into a pitcher.
- Stir in lemon juice and sweetener.
- Add remaining water and adjust taste.
- Serve over ice with cucumber or mint garnish.
