- 6 chicken thighs (bone-in or boneless)
- 2 cups hominy (canned, drained, and rinsed)
- 1 can (10.5 oz) cream of chicken or mushroom soup
- 1 cup shredded cheddar cheese
- 1/2 cup diced green chiles
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium-high heat, heat the olive oil and sear the chicken thighs for 2-3 minutes per side until golden brown. Remove and set aside.
- In a greased casserole dish, combine the hominy, diced green chiles, onion, garlic, and cream of chicken soup. Mix well.
- Season the mixture with paprika, cumin, salt, and pepper.
- Place the seared chicken thighs on top of the hominy mixture.
- Sprinkle shredded cheese evenly over the dish.
- Cover the casserole with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
- Let the casserole cool for a few minutes before serving.
Notes
- For a spicier version, add diced jalapeños or a dash of hot sauce.
- This recipe can be made ahead of time and baked when ready.
