Ingredients
6 chicken thighs (bone-in or boneless)
2 cups hominy (canned, drained, and rinsed)
1 can (10.5 oz) cream of chicken or mushroom soup
1 cup shredded cheddar cheese
1/2 cup diced green chiles
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp paprika
1/2 tsp cumin
Salt and pepper to taste
1 tbsp olive oil
Instructions
Preheat your oven to 375°F (190°C).
In a skillet over medium-high heat, heat the olive oil and sear the chicken thighs for 2-3 minutes per side until golden brown. Remove and set aside.
In a greased casserole dish, combine the hominy, diced green chiles, onion, garlic, and cream of chicken soup. Mix well.
Season the mixture with paprika, cumin, salt, and pepper.
Place the seared chicken thighs on top of the hominy mixture.
Sprinkle shredded cheese evenly over the dish.
Cover the casserole with foil and bake for 25 minutes.
Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
Let the casserole cool for a few minutes before serving.
Notes
For a spicier version, add diced jalapeños or a dash of hot sauce.
