Ingredients

  • 6 chicken thighs (bone-in or boneless)
  • 2 cups hominy (canned, drained, and rinsed)
  • 1 can (10.5 oz) cream of chicken or mushroom soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced green chiles
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a skillet over medium-high heat, heat the olive oil and sear the chicken thighs for 2-3 minutes per side until golden brown. Remove and set aside.
  • In a greased casserole dish, combine the hominy, diced green chiles, onion, garlic, and cream of chicken soup. Mix well.
  • Season the mixture with paprika, cumin, salt, and pepper.
  • Place the seared chicken thighs on top of the hominy mixture.
  • Sprinkle shredded cheese evenly over the dish.
  • Cover the casserole with foil and bake for 25 minutes.
  • Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  • Let the casserole cool for a few minutes before serving.
