1 block (8 oz) full-fat cream cheese
1 tbsp olive oil or cooking spray
2 tbsp BBQ rub (or your favorite seasoning blend)
Optional toppings: hot honey, jalapeños, chopped herbs
Preheat smoker or grill to 225°F.
Score the top of the cream cheese block in a crosshatch pattern using a knife.
Drizzle with olive oil or spray lightly to help seasoning stick.
Coat all sides generously with BBQ rub or seasoning blend.
Place cream cheese on a foil tray or cast iron skillet.
Smoke uncovered for 2 hours.
Remove from smoker and let rest for 10–15 minutes.
