For the Shrimp & Asparagus:
- 1 lb large shrimp, peeled and deveined
- 1 bunch asparagus, ends trimmed
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon lemon juice (optional)
For the Creamy Garlic Sauce:
- ½ cup Greek yogurt or mayonnaise
- 2–3 cloves garlic, minced or roasted
- 1 teaspoon Dijon mustard
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1–2 tablespoons water or milk (to adjust consistency)
Instructions
- Preheat grill or stovetop grill pan to medium-high heat.
- In a bowl, toss shrimp with olive oil, garlic powder, paprika, salt, and pepper. Let marinate for 10 minutes.
- Drizzle asparagus with olive oil and season with salt and pepper.
- Grill shrimp 2–3 minutes per side until opaque with grill marks. Remove and set aside.
- Grill asparagus for 4–6 minutes until tender-crisp.
- In a small bowl, whisk together Greek yogurt, garlic, Dijon mustard, lemon juice, olive oil, salt, and pepper. Thin with water or milk if desired.
- Assemble bowls with your choice of base (rice, greens, or quinoa), top with grilled shrimp and asparagus, and drizzle with creamy garlic sauce. Serve immediately.
Notes
- For a low-calorie version, use non-fat Greek yogurt and skip olive oil in the sauce.
- Add extra veggies like grilled zucchini or bell peppers for more color and nutrition.
