For the Shrimp & Asparagus:

  • 1 lb large shrimp, peeled and deveined
  • 1 bunch asparagus, ends trimmed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon lemon juice (optional)

For the Creamy Garlic Sauce:

  • ½ cup Greek yogurt or mayonnaise
  • 23 cloves garlic, minced or roasted
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 12 tablespoons water or milk (to adjust consistency)

Instructions

  1. Preheat grill or stovetop grill pan to medium-high heat.
  2. In a bowl, toss shrimp with olive oil, garlic powder, paprika, salt, and pepper. Let marinate for 10 minutes.
  3. Drizzle asparagus with olive oil and season with salt and pepper.
  4. Grill shrimp 2–3 minutes per side until opaque with grill marks. Remove and set aside.
  5. Grill asparagus for 4–6 minutes until tender-crisp.
  6. In a small bowl, whisk together Greek yogurt, garlic, Dijon mustard, lemon juice, olive oil, salt, and pepper. Thin with water or milk if desired.
  7. Assemble bowls with your choice of base (rice, greens, or quinoa), top with grilled shrimp and asparagus, and drizzle with creamy garlic sauce. Serve immediately.

Notes

  • For a low-calorie version, use non-fat Greek yogurt and skip olive oil in the sauce.
