Instructions

  • In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain excess grease and set the beef aside.
  • In the same pot, sauté the diced onion and celery until softened, about 5 minutes. Add the minced garlic and cook for an additional minute.
  • Stir in the paprika, thyme, salt, and pepper. Return the ground beef to the pot and mix well.
  • Add the diced potatoes and pour in the beef broth, ensuring the ingredients are fully submerged. Bring to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the potatoes are fork-tender.
  • For a creamier texture, mash some of the potatoes directly in the pot or stir in the heavy cream.
  • If desired, add shredded cheddar cheese and cook for another 5 minutes until melted.
  • Serve hot, garnished with fresh parsley or chives.

Notes

  • For a lighter version, use milk instead of heavy cream and lean ground beef.
  • This soup can be made in a slow cooker. After browning the beef and sautéing the aromatics, transfer all ingredients to the slow cooker and cook on low for 6-8 hours or high for 3-4 hours.
