Crust:

  • 1 ½ cups graham cracker crumbs (about 10 full sheets)
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • Pinch of salt

Cheesecake Filling:

  • 3 (8 oz) blocks cream cheese, softened
  • ¾ cup granulated sugar
  • ½ cup sour cream, room temp
  • 1 tablespoon all-purpose flour
  • 1 ½ teaspoons pure vanilla extract
  • 3 large eggs, room temp

Vanilla Custard:

  • 2 large egg yolks
  • ⅓ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 ¼ cups whole milk
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla extract

Chocolate Ganache:

  • ½ cup heavy cream
  • 4 oz semi-sweet or bittersweet chocolate, chopped

Instructions

  1. Preheat oven to 325°F. Line a 9-inch springform pan with parchment and grease lightly.
  2. Combine graham cracker crumbs, sugar, butter, and salt. Press into the pan and bake for 10 minutes. Let cool.
  3. Beat cream cheese until smooth. Add sugar and flour, beat until fluffy. Mix in sour cream and vanilla.
  4. Add eggs one at a time, beating just until incorporated.
  5. Pour batter over crust. Wrap pan in foil and bake in a water bath for 50–55 minutes.
  6. Turn off oven, crack the door, and let cool for 1 hour. Chill for at least 3 hours.
  7. In a saucepan, cook yolks, sugar, cornstarch, and milk over medium heat until thick. Stir in butter and vanilla. Cool, then spread over cheesecake.
  8. Heat cream to simmer. Pour over chopped chocolate. Let sit 3 minutes, then whisk into ganache. Pour over custard layer.
  9. Chill again until ganache is set. Slice and serve.

Notes

  • Best made one day ahead.
  • Do not freeze with ganache or custard applied. Add after thawing.
  • Use a sharp knife dipped in hot water for clean slices.
