Learn how to make tender, flavorful oven-baked beef short ribs with this step-by-step recipe. Perfect for a hearty, comforting meal that fills your home with rich aromas and delights your taste buds.

Ingredients

  • 4 lbs beef short ribs (English cut preferred)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup beef broth or red wine
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 sprigs fresh rosemary or thyme
  • Optional: ½ cup BBQ sauce or soy glaze

Instructions

  • Preheat your oven to 275°F.
  • Trim excess fat from the ribs and season generously with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat and sear the ribs on all sides until golden brown.
  • Arrange the seared ribs in a baking dish or roasting pan. Add beef broth or red wine to cover the bottom of the dish. Scatter diced onions, minced garlic, and fresh herbs around the ribs.
  • Optional: Brush the ribs with BBQ sauce or soy glaze for added flavor.
  • Cover the dish tightly with aluminum foil and bake at 275°F for 3–4 hours, or until the meat is tender and the internal temperature reaches 200°F.
  • Remove from the oven and let the ribs rest for 10 minutes before serving.

Notes

  • For faster cooking, you can bake the ribs at 350°F for 2–2.5 hours, though the texture may not be as tender.
  • Add vegetables like carrots, celery, or potatoes to the dish for a one-pan meal.
  • Baste the ribs every hour if using a sauce to keep them moist and flavorful.
