These juicy oven-baked salmon bites are quick, flavorful, and perfectly cooked every time. With simple ingredients and less than 15 minutes in the oven, they’re an ideal weeknight dinner or healthy meal prep option.

Ingredients

  • 1 lb salmon, skinless, cut into 1-inch cubes
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp smoked paprika (optional)
  • Salt, to taste
  • Black pepper, to taste
  • 1 tbsp lemon juice (optional for serving)
  • Fresh parsley or dill for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper.
  3. Pat salmon cubes dry with a paper towel.
  4. In a bowl, toss salmon with olive oil, garlic powder, paprika, salt, and pepper.
  5. Spread salmon bites in a single layer on the baking sheet.
  6. Bake for 12–14 minutes, or until the salmon flakes easily and reaches 145°F internally.
  7. Optional: Broil for 1–2 minutes for crispy edges.
  8. Remove from oven and let rest for 2 minutes before serving.
  9. Garnish with lemon juice and herbs if desired.

Notes

  • For extra flavor, marinate salmon in olive oil, lemon juice, and spices for 30 minutes before baking.
  • Use foil if you prefer softer bites, and remove it during the last few minutes for a slight crust.
  • Leftovers can be stored in the fridge for up to 3 days or frozen for up to 2 months.
