For the Sauce:
- 3–4 jalapeños, seeded and diced
- 3 cloves garlic, minced
- 2 tablespoons butter or olive oil
- 2 tablespoons flour
- 1 ½ cups chicken broth
- 1 teaspoon hot sauce
- ½ chicken bouillon cube
- ¾ teaspoon oregano
- ¾ teaspoon mustard powder
- ¾ teaspoon parsley
- ¾ teaspoon onion powder
- ½ teaspoon garlic powder
- 4 oz. cream cheese, softened and cubed
- ½ cup sour cream
- ¾ cup shredded cheddar cheese
For Garnish:
- Sliced green onions
- Crispy fried onions (optional, for texture and flavor)
Instructions
- Prepare the Chicken:
- Slice chicken breasts in half lengthwise, tenderize to ½-inch thickness, and season with salt, pepper, and paprika.
- Heat olive oil in a skillet over medium-high heat and sear the chicken for 4-5 minutes per side until golden brown. Set aside.
- Make the Sauce:
- In the same skillet, add butter or olive oil. Sauté diced jalapeños and garlic for 3 minutes.
- Stir in flour and cook for 1-2 minutes until golden. Gradually add chicken broth, stirring continuously. Add hot sauce, bouillon cube, and spices. Bring to a boil, then reduce heat.
- Add cream cheese and sour cream, stirring until melted and smooth. Mix in cheddar cheese until fully combined.
- Combine and Serve:
- Return the chicken to the skillet, spoon the sauce over, and let it heat through for 3 minutes.
- Garnish with sliced green onions and crispy fried onions if desired. Serve immediately with rice, roasted vegetables, or tortilla chips for dipping.
Notes
- Spice Level: For a milder sauce, remove the jalapeño seeds and membranes.
- Cheese Tip: Always shred cheese from a block for the best melting and flavor.
- Serving Ideas: Pair with rice, roasted vegetables, tortilla chips, or cornbread.
- Storage: Refrigerate leftovers in an airtight container for up to 3 days or freeze for up to 3 months. Reheat gently to maintain sauce texture.
