Ingredients

For the Chicken:

  • 2 large boneless, skinless chicken breasts

  • 3-4 jalapeños, seeded and diced
  • 3 cloves garlic, minced
  • 2 tablespoons butter or olive oil
  • 2 tablespoons flour
  • 1 ½ cups chicken broth
  • 1 teaspoon hot sauce
  • ½ chicken bouillon cube
  • ¾ teaspoon oregano
  • ¾ teaspoon mustard powder
  • ¾ teaspoon parsley
  • ¾ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 4 oz. cream cheese, softened and cubed
  • ½ cup sour cream
  • ¾ cup shredded cheddar cheese

For Garnish:

  • Sliced green onions
  • Crispy fried onions (optional, for texture and flavor)

Instructions

  • Prepare the Chicken:
    • Slice chicken breasts in half lengthwise, tenderize to ½-inch thickness, and season with salt, pepper, and paprika.
    • Heat olive oil in a skillet over medium-high heat and sear the chicken for 4-5 minutes per side until golden brown. Set aside.
  • Make the Sauce:
    • In the same skillet, add butter or olive oil. Sauté diced jalapeños and garlic for 3 minutes.
    • Stir in flour and cook for 1-2 minutes until golden. Gradually add chicken broth, stirring continuously. Add hot sauce, bouillon cube, and spices. Bring to a boil, then reduce heat.
    • Add cream cheese and sour cream, stirring until melted and smooth. Mix in cheddar cheese until fully combined.
  • Combine and Serve:
    • Return the chicken to the skillet, spoon the sauce over, and let it heat through for 3 minutes.
    • Garnish with sliced green onions and crispy fried onions if desired. Serve immediately with rice, roasted vegetables, or tortilla chips for dipping.
