This 5-minute lemon dressing recipe vinaigrette is fresh, tangy, and perfect for salads, roasted vegetables, or marinades. Made with lemon juice, olive oil, Dijon mustard, garlic, and seasoning, it’s healthy, dairy-free, and incredibly flavorful.

Ingredients

  • 1/4 cup fresh lemon juice
  • 1/2 cup extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a bowl or mason jar, add the lemon juice, Dijon mustard, minced garlic, sea salt, and black pepper.
  2. Whisk (or shake) until well combined.
  3. Slowly add the olive oil while whisking vigorously until fully emulsified.
  4. Taste and adjust salt or lemon juice as needed.
  5. Store in a sealed jar in the fridge for up to 10 days. Shake well before each use.

  • Add 1 tsp honey for sweetness or crushed red pepper flakes for heat.
