- 1/2 cup extra virgin olive oil
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper
Instructions
- In a bowl or mason jar, add the lemon juice, Dijon mustard, minced garlic, sea salt, and black pepper.
- Whisk (or shake) until well combined.
- Slowly add the olive oil while whisking vigorously until fully emulsified.
- Taste and adjust salt or lemon juice as needed.
- Store in a sealed jar in the fridge for up to 10 days. Shake well before each use.

- Add 1 tsp honey for sweetness or crushed red pepper flakes for heat.
