Ingredients

- 1 cup quinoa (dry)
- 1 can chickpeas, rinsed and drained
- Juice and zest of 1 lemon
- 1/2 cup parsley, chopped
- 2 tbsp mint, chopped
- 3 tbsp olive oil
- 2 garlic cloves, minced
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Cook quinoa and let it fluff.
- Sauté garlic and cumin.
- Mix all ingredients together.
- Season and serve.
