A quick and easy quinoa dish bursting with lemony freshness, fragrant herbs, and satisfying chickpeas. Perfect as a meal or side.

Ingredients

  • 1 cup quinoa (dry)
  • 1 can chickpeas, rinsed and drained
  • Juice and zest of 1 lemon
  • 1/2 cup parsley, chopped
  • 2 tbsp mint, chopped
  • 3 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  • Cook quinoa and let it fluff.
  • Sauté garlic and cumin.
  • Mix all ingredients together.
  • Season and serve.
