Moist, citrusy, and topped with a light glaze, this lemon poppy seed cake is perfect for brunches or casual desserts.

Ingredients

  • 2 cups flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 tbsp poppy seeds
  • 1 cup butter
  • 1¼ cups sugar
  • 3 eggs
  • 2 tsp vanilla
  • ½ cup sour cream
  • ¼ cup milk
  • Zest & juice of 2 lemons

Instructions

  • Preheat oven to 350°F. Grease pan.
  • Mix dry ingredients.
  • Cream butter & sugar. Add eggs, lemon zest, juice, vanilla.
  • Alternate dry ingredients with sour cream/milk.
  • Bake 45–55 mins. Cool, glaze, and serve.

Notes

Glaze with lemon juice and powdered sugar.
