- 1 cup long-grain white rice
- 2 tablespoons vegetable oil
- 1/2 cup tomato sauce
- 2 cups chicken broth
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon ground cumin
- Optional: 1/3 cup frozen peas or chopped cilantro for garnish
Instructions
- Rinse rice under cold water until clear.
- In a medium saucepan, heat oil over medium heat. Add rice and toast until golden brown (5–7 minutes).
- Add onion and garlic. Cook 2 more minutes until fragrant.
- Stir in tomato sauce, chicken broth, salt, and cumin. Bring to a boil.
- Reduce heat to low, cover tightly, and simmer for 20 minutes.
- Turn off heat. Let rest covered for 10 minutes.
- Fluff rice with a fork. Garnish with peas or cilantro if desired.
Notes
- For spicier rice, add 1 chopped jalapeño during the sauté step.
- For vegetarian version, use vegetable broth instead of chicken broth.
- You can double the recipe and freeze half for later use.
