- 8 oz cream cheese, room temperature
- ¼ cup sour cream
- ⅓ cup granulated sugar
- 1 large egg + 1 yolk
- 2–3 key limes, juiced and zested
- 10 graham crackers, crushed
- 4 tbsp unsalted butter, melted
- Pinch of salt
Instructions
- Preheat oven to 325°F. Line muffin tin.
- Make crust with graham crumbs, butter, and salt. Press into tins.
- Mix cream cheese, sugar, sour cream, lime juice/zest, eggs.
- Pour filling onto crusts.
- Bake 18–20 min. Cool, chill, and serve!
