These oven roasted garlic cabbage steaks are crispy on the outside, tender on the inside, and packed with bold, garlicky flavor. A simple, healthy, and delicious side or main dish for any occasion.

Ingredients

  • 1 large green cabbage
  • 4–6 garlic cloves, finely minced
  • 3–4 tablespoons olive oil (extra virgin preferred)
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon smoked paprika (optional)
  • 1 tablespoon lemon juice (optional)
  • Optional toppings: grated Parmesan, chili flakes, nutritional yeast, fresh herbs

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Remove outer leaves from the cabbage and slice into ¾–1 inch thick steaks, cutting through the core to hold each slice together.
  3. In a bowl, mix minced garlic, olive oil, salt, pepper, and any optional seasonings.
  4. Place cabbage steaks on baking sheet. Brush both sides with the garlic oil mixture.
  5. Roast for 25–30 minutes, flipping halfway through. Cabbage should be tender in the center and crispy on the edges.
  6. Remove from oven, add optional toppings, and serve hot.

Notes

  • For a spicy version, add chili flakes or cayenne to the oil.
  • To make it vegan-cheesy, sprinkle with nutritional yeast instead of cheese.
  • For meal prep: store in an airtight container up to 4 days or freeze up to 2 months.
  • Reheat in oven or air fryer for best texture.
