- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2¾ cups all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 4 (3 oz) boxes of flavored Jello (e.g., cherry, lime, orange, berry blue)
- Optional: extra Jello powder or colored sanding sugar for decoration
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
- In a large bowl, cream together softened butter and sugar until light and fluffy (about 2–3 minutes).
- Add eggs and vanilla extract, and beat until well combined.
- In a separate bowl, whisk flour, baking powder, and salt. Gradually add to the wet mixture, mixing until dough forms.
- Divide dough evenly into 4–6 bowls. Add 2 tablespoons of a different Jello flavor to each bowl and knead until fully incorporated.
- Optional: Chill dough for 20–30 minutes for easier handling and color preservation.
- Roll dough into 1-inch balls. Place on baking sheet, flatten slightly, and top with extra Jello powder or sanding sugar if desired.
- Bake for 8–10 minutes. Edges should be set, centers slightly soft.
- Cool for 5 minutes on pan, then transfer to wire racks to cool completely.
Notes
- Dough can be chilled overnight and baked the next day.
- To freeze, shape and store dough balls in freezer-safe bags for up to 2 months.
- Baked cookies freeze well for 3 months if layered with wax paper.
