Ingredients

1 can (14.75 oz) of salmon (or 1 ½ cups cooked salmon)

1 large egg

½ cup breadcrumbs or crushed crackers

¼ cup finely chopped onion

1 tablespoon lemon juice

Salt and pepper to taste

1–2 tablespoons mayonnaise (optional, for added moisture)

1 tablespoon fresh chopped dill or parsley (optional)

Instructions

Drain canned salmon and flake into a large mixing bowl.

Add egg, breadcrumbs, chopped onion, lemon juice, salt, pepper, and optional mayo or herbs.

Mix until just combined. Add more breadcrumbs if mixture feels too wet.

Shape mixture into 6–8 evenly-sized patties, about ½ inch thick.

Chill patties in the fridge for 15–30 minutes for better shape retention.

Heat a skillet over medium heat with 1–2 tbsp oil.

Fry each patty for 3–4 minutes per side until golden brown and heated through.

Serve with sauce of choice and your favorite sides.
