Cajun Shrimp and Chicken Pasta

Ingredients

  • ½ pound raw shrimp, peeled and deveined
  • 2 boneless skinless chicken breasts, thinly sliced
  • 12 oz fettuccine or pasta of choice
  • 2 tablespoons Cajun seasoning (divided)
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and black pepper to taste
  • ½ cup reserved pasta water
  • Optional: fresh parsley and lemon wedges for garnish

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta according to package directions. Reserve ½ cup pasta water before draining.
  2. In a bowl, season shrimp with 1 tablespoon Cajun seasoning. In another bowl, season chicken with the remaining tablespoon.
  3. Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, 6–8 minutes. Remove from pan and set aside.
  4. In the same skillet, add remaining butter and cook shrimp for 2–3 minutes per side, or until pink and opaque. Remove and set aside.
  5. Reduce heat to medium, add garlic, and sauté for 30 seconds. Pour in heavy cream, Parmesan, and reserved pasta water. Stir until sauce thickens, about 2–3 minutes.
  6. Add cooked pasta, shrimp, and chicken into the sauce. Toss to coat evenly.
  7. Taste and adjust seasoning. Serve hot, garnished with parsley and lemon wedges if desired.

Notes

  • For a spicier dish, add extra Cajun seasoning or a pinch of red pepper flakes.
  • You can substitute penne or linguine for fettuccine.
  • This dish is also delicious with a splash of white wine added to the cream sauce.
