Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 small onion, diced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 can (28 oz) crushed tomatoes
  • 6 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 9 oz cheese tortellini (fresh or frozen)
  • 2 cups fresh spinach or kale, chopped
  • Salt and pepper, to taste
  • Optional: Red pepper flakes, fresh basil, or parsley for garnish

Instructions

  • Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it into smaller pieces. Remove excess grease if needed.
  • Add garlic, onion, carrots, and celery to the pot. Sauté until softened and fragrant, about 5 minutes.
  • Stir in crushed tomatoes and chicken broth. Bring to a gentle simmer.
  • Add tortellini and cook according to package instructions, typically 5-7 minutes.
  • Stir in heavy cream and spinach. Simmer for 2-3 minutes until the spinach is wilted and the soup is creamy.
  • Season with salt, pepper, and optional red pepper flakes to taste.
  • Serve hot, garnished with fresh basil or parsley if desired.
