- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 carrot, diced
- 1 can diced tomatoes
- 4 cups fish stock
- 1/2 cup white wine (optional)
- 1 bay leaf
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions, garlic, and carrots until softened.
- Stir in diced tomatoes, fish stock, white wine, and the bay leaf. Let it simmer for 15 minutes.
- Add the mixed seafood and cook for another 5-7 minutes, or until the seafood is tender.
- Discard the bay leaf, garnish with parsley, and serve hot.

- Use frozen seafood if fresh is unavailable; ensure it is thawed before cooking.
- Add chili flakes for a spicy kick or coconut milk for a creamy variation.
