Ingredients
1 lb mixed seafood (shrimp, mussels, clams, white fish)
2 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, minced
1 carrot, diced
1 can diced tomatoes
4 cups fish stock
1/2 cup white wine (optional)
1 bay leaf
Fresh parsley for garnish
Instructions
Heat olive oil in a large pot over medium heat. Sauté onions, garlic, and carrots until softened.
Stir in diced tomatoes, fish stock, white wine, and the bay leaf. Let it simmer for 15 minutes.
Add the mixed seafood and cook for another 5-7 minutes, or until the seafood is tender.
Discard the bay leaf, garnish with parsley, and serve hot.
