Ingredients

  • 1 lb mixed seafood (shrimp, mussels, clams, white fish)
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 carrot, diced
  • 1 can diced tomatoes
  • 4 cups fish stock
  • 1/2 cup white wine (optional)
  • 1 bay leaf
  • Fresh parsley for garnish

Instructions

  • Heat olive oil in a large pot over medium heat. Sauté onions, garlic, and carrots until softened.
  • Stir in diced tomatoes, fish stock, white wine, and the bay leaf. Let it simmer for 15 minutes.
