3 overripe bananas, mashed
2 eggs
½ cup vegetable oil
¼ cup buttermilk
½ cup granulated sugar
½ cup brown sugar
1 teaspoon vanilla extract
1¾ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon cinnamon
¼ teaspoon salt
¾ cup chopped walnuts (plus more for topping)
Instructions
Preheat oven to 325°F (163°C). Grease and line a 9×5-inch loaf pan with parchment paper.
In a large bowl, whisk together the mashed bananas, eggs, oil, buttermilk, vanilla, and both sugars until smooth.
In a separate bowl, combine flour, baking soda, cinnamon, and salt.
Gently fold the dry ingredients into the wet mixture. Do not overmix.
Fold in chopped walnuts.
Pour the batter into the prepared loaf pan and smooth the top. Sprinkle extra walnuts on top if desired.
Bake for 60–70 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
