- 2 eggs
- ½ cup vegetable oil

- ½ teaspoon cinnamon

Instructions
- Preheat oven to 325°F (163°C). Grease and line a 9×5-inch loaf pan with parchment paper.
- In a large bowl, whisk together the mashed bananas, eggs, oil, buttermilk, vanilla, and both sugars until smooth.
- In a separate bowl, combine flour, baking soda, cinnamon, and salt.
- Gently fold the dry ingredients into the wet mixture. Do not overmix.
- Fold in chopped walnuts.
- Pour the batter into the prepared loaf pan and smooth the top. Sprinkle extra walnuts on top if desired.
- Bake for 60–70 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let cool for 10 minutes in the pan, then transfer to a wire rack to cool completely before slicing.
