A creamy, dreamy cheesecake with a graham cracker crust, rich white chocolate filling, and vibrant strawberry swirl—perfect for celebrations, holidays, or indulgent weekends.

Ingredients

For the Strawberry Swirl Sauce:

  • 12 oz strawberries (fresh or frozen, chopped)
  • ¼ cup granulated sugar
  • ¼ cup water
  • 1 tablespoon cornstarch
  • For the Graham Cracker Crust:
  • 1½ cups graham cracker crumbs (about 13 full crackers)
  • ⅓ cup granulated sugar
  • 6 tablespoons melted salted butter

For the Cheesecake Filling:

  • 32 oz full-fat cream cheese, room temperature
  • ⅔ cup granulated sugar
  • ½ cup sour cream, room temperature
  • 2 tablespoons all-purpose flour
  • 4 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 8 oz white chocolate baking bar, melted and slightly cooled

Instructions

  1. Make the Strawberry Sauce: Combine strawberries, sugar, water, and cornstarch in a saucepan. Simmer over medium heat while mashing berries until thickened (about 5 minutes). Strain and cool completely.
  2. Prepare the Crust: Preheat oven to 375°F. Mix graham crumbs, sugar, and butter. Press into a 10-inch springform pan. Bake 8 minutes. Let cool.
  3. Reduce Oven to 325°F.
  4. Mix the Filling: Beat cream cheese and sugar until smooth. Add sour cream and flour. Add eggs one at a time on low speed. Stir in vanilla and melted white chocolate.
  5. Assemble: Pour half the filling over the crust. Dollop half the sauce and swirl. Add remaining batter and repeat swirl.
  6. Bake: 65–75 minutes until center jiggles slightly.
  7. Cool: Let rest in oven (door open) for 10 minutes. Run knife around edges. Cool 1 hour, then chill 4 hours or overnight.
  8. Serve and Enjoy! Garnish with strawberries, whipped cream, or white chocolate curls if desired.
