These Sweet Chili Halloumi Wraps are packed with bold flavor, fresh vegetables, and golden grilled cheese—all ready in just 25 minutes. The perfect vegetarian meal for lunch or dinner!

Ingredients

  • 8 oz halloumi cheese, sliced into ¼-inch pieces
  • 4 large tortilla wraps (whole wheat or flour)
  • ⅓ cup sweet chili sauce
  • 1 red bell pepper, thinly sliced
  • ½ cucumber, julienned
  • 1 small carrot, shredded
  • 1 cup baby spinach or lettuce
  • ½ red onion, thinly sliced (optional)
  • 1 tbsp olive oil (for grilling)
  • 1 tbsp chopped fresh mint or cilantro (optional)
  • Lime wedges, for serving

Instructions

  1. Pat halloumi slices dry with paper towels.
  2. Heat a nonstick skillet or grill pan over medium heat and add olive oil.
  3. Grill halloumi slices for 2–3 minutes per side until golden brown.
  4. Brush sweet chili sauce on each slice and cook for 1 more minute.
  5. Warm tortillas slightly in a skillet or microwave.
  6. Lay out wraps and spread a thin layer of sweet chili sauce.
  7. Add spinach, cucumbers, carrots, bell peppers, onions, and grilled halloumi.
  8. Drizzle more chili sauce if desired.
  9. Sprinkle with fresh herbs and a squeeze of lime.
  10. Fold the sides, roll tightly, and serve fresh.
