Ingredients

- 1 lb chicken thighs or breasts, diced
- 1/4 cup soy sauce
- 2 tbsp honey or brown sugar
- 2 tbsp rice vinegar
- 2 garlic cloves, minced
- 1 tsp grated fresh ginger
- 1 tbsp cornstarch mixed with 2 tbsp water
- 2 cups cooked rice
- 2 cups assorted vegetables
- 1 tbsp sesame or neutral oil
- Garnish: sesame seeds, green onions
Instructions
- Prepare all ingredients and mix the sauce.
- Cook chicken until golden and cooked through.
- Add sauce to chicken and simmer.
- Steam or sauté veggies.
- Assemble bowls and garnish.
