Ingredients
- – 2 cups blanched almond flour
- – 1/2 cup coconut sugar
- – 1 egg
- – 1/4 cup coconut oil (melted)
- – 1/2 tsp baking soda
- – 1 tsp vanilla extract
- – 1/3 cup dark chocolate chips
Instructions
- 1. Preheat oven to 350°F.
- 2. Mix dry ingredients in one bowl, wet in another.
- 3. Combine both and fold in chocolate chips.
- 4. Scoop onto parchment-lined tray and flatten slightly.
- 5. Bake 10–12 mins. Let cool before serving.
Notes
- For crispier cookies, bake 1–2 minutes longer and cool completely on a rack.
- To make vegan: use flax egg and vegan chocolate chips.
- Dough can be refrigerated for up to 4 days or frozen for future baking.
