Ingredients
– 2 cups blanched almond flour
– 1/2 cup coconut sugar
– 1 egg
– 1/4 cup coconut oil (melted)
– 1/2 tsp baking soda
– 1 tsp vanilla extract
– 1/3 cup dark chocolate chips
Instructions
1. Preheat oven to 350°F.
2. Mix dry ingredients in one bowl, wet in another.
3. Combine both and fold in chocolate chips.
4. Scoop onto parchment-lined tray and flatten slightly.
5. Bake 10–12 mins. Let cool before serving.
Notes
For crispier cookies, bake 1–2 minutes longer and cool completely on a rack.
To make vegan: use flax egg and vegan chocolate chips.
Dough can be refrigerated for up to 4 days or frozen for future baking.
