Soft, chewy, and naturally gluten-free, these almond flour chocolate chip cookies are easy to make, loaded with flavor, and perfect for a healthier treat. Great for paleo, keto, and clean-eating lifestyles.

Ingredients

  • – 2 cups blanched almond flour  
  • – 1/2 cup coconut sugar  
  • – 1 egg  
  • – 1/4 cup coconut oil (melted)  
  • – 1/2 tsp baking soda  
  • – 1 tsp vanilla extract  
  • – 1/3 cup dark chocolate chips  

Instructions

  • 1. Preheat oven to 350°F.  
  • 2. Mix dry ingredients in one bowl, wet in another.  
  • 3. Combine both and fold in chocolate chips.  
  • 4. Scoop onto parchment-lined tray and flatten slightly.  
  • 5. Bake 10–12 mins. Let cool before serving.

Notes

  • For crispier cookies, bake 1–2 minutes longer and cool completely on a rack.
  • To make vegan: use flax egg and vegan chocolate chips.
  • Dough can be refrigerated for up to 4 days or frozen for future baking.
  • Optional add-ins: walnuts, almond extract, cinnamon, or shredded coconut.
