A quick, refreshing Mediterranean salad made with juicy tomatoes, marinated artichokes, capers, and herbs.

Ingredients

  • 2–3 large tomatoes or 1 pint cherry tomatoes
  • 1 jar marinated artichoke hearts
  • 2 tbsp capers
  • ½ small red onion
  • 2 tbsp chopped parsley
  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar or lemon juice
  • Salt and pepper to taste

Instructions

  1. Prep and combine all ingredients.
  2. Drizzle dressing, season, and let sit for 10–15 minutes.
  3. Garnish with herbs before serving.

Notes

Add feta or olives for extra flavor.
