A quick, refreshing Mediterranean salad made with juicy tomatoes, marinated artichokes, capers, and herbs.
Ingredients

- 2–3 large tomatoes or 1 pint cherry tomatoes
- 1 jar marinated artichoke hearts
- 2 tbsp capers
- ½ small red onion
- 2 tbsp chopped parsley
- 3 tbsp olive oil
- 1 tbsp red wine vinegar or lemon juice
- Salt and pepper to taste
Instructions
- Prep and combine all ingredients.
- Drizzle dressing, season, and let sit for 10–15 minutes.
- Garnish with herbs before serving.
