Soft, chewy unicorn cookies bursting with vibrant colors! Made with just 4 ingredients—no eggs, dairy, or flour—perfect for any occasion!

Ingredients

  • 1 cup all-purpose flour
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • Gel food coloring (various colors)
  • ½ cup rainbow sprinkles

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the butter and sugar until light and fluffy.
  • Add the egg and vanilla extract, mixing until well combined.
  • Gradually incorporate the flour, mixing until a smooth dough forms.
  • Divide the dough into separate bowls and mix in gel food coloring for each desired color.
  • Roll small portions of the dough into balls, flatten slightly, and place on the prepared baking sheet.
  • Add sprinkles on top of each cookie for decoration.
  • Bake for 10–12 minutes or until the edges are just set.
  • Allow cookies to cool completely before serving.

Notes

  • Use gel food coloring for the most vibrant results.
  • Chilling the dough for 30 minutes can make shaping easier and help cookies retain their shape while baking.
  • Store in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
