Ingredients

  • 2 cups whole milk
  • 3 large egg yolks
  • 1/3 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsalted butter
  • 3–4 ripe bananas, sliced
  • 1 box Nilla Wafers (or gluten-free vanilla cookies)
  • 1 cup whipped cream or topping of choice

Instructions

  1. In a medium saucepan, heat the milk over medium heat until steaming but not boiling.
  2. In a mixing bowl, whisk together the egg yolks, sugar, cornstarch, and salt until smooth.
  3. Slowly add a bit of the hot milk to the egg mixture to temper, then return everything to the saucepan.
  4. Stir constantly over medium heat until the mixture thickens into a pudding consistency (6–8 minutes).
  5. Remove from heat and stir in the vanilla extract and butter. Let it cool slightly.
  6. In a trifle bowl or baking dish, start layering: wafers, banana slices, and warm pudding.
  7. Repeat the layers until ingredients are used up, ending with pudding on top.
  8. Cover and chill for at least 4 hours or overnight.
  9. Before serving, top with whipped cream and garnish with crushed wafers or banana slices.
