Ingredients

For the Chicken:

  • 2 boneless, skinless chicken breasts
  • 1/2 cup cornstarch or flour
  • 1 egg
  • Salt and pepper to taste
  • For the Bang Bang Sauce:
  • 1/3 cup mayonnaise
  • 3 tablespoons sweet chili sauce
  • 1 tablespoon sriracha
  • 1 teaspoon honey (optional for added sweetness)

For the Bowl:

  • 2 cups cooked jasmine rice
  • 1/2 cup shredded carrots
  • 1/2 cup edamame (steamed)
  • 1/2 cup shredded red cabbage
  • 1/2 cucumber, thinly sliced
  • 2 green onions, chopped
  • Cilantro and sesame seeds for garnish

Instructions

  1. Prepare the Chicken: Cut the chicken breasts into bite-sized pieces. Season lightly with salt and pepper.
  2. Dredge and Coat: Dredge each chicken piece in cornstarch or flour, dip into a beaten egg, and then coat again in cornstarch or flour. Set aside on a plate.
  3. Cook the Chicken: Heat a skillet over medium-high heat with a light layer of oil. Fry chicken pieces in batches until golden brown and cooked through, about 4-5 minutes per side. Alternatively, air fry at 400°F for 10–12 minutes, flipping halfway.
  4. Make the Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey until smooth and creamy. Adjust heat to taste.
  5. Assemble the Bowl: Divide cooked rice into bowls. Arrange carrots, cabbage, edamame, and cucumber around the bowl. Add the crispy chicken in the center.
  6. Top and Serve: Drizzle bang bang sauce generously over the chicken. Garnish with green onions, cilantro, and sesame seeds. Serve immediately and enjoy!
