- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream the butter and sugar together until light and fluffy.
- Beat in the eggs, one at a time, followed by the vanilla and almond extracts.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually mix the dry ingredients into the wet mixture until fully combined.
- Scoop the dough into small balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each ball slightly with the back of a spoon.
- Bake for 10–12 minutes, or until the edges are golden.
- Let cool on a wire rack and enjoy!
Notes
- Start with a small amount of almond extract, as it’s concentrated, and adjust to taste.
- For a variation, add dried cherries, slivered almonds, or cocoa powder to the dough.
