Almond extract cookies are a delightful treat with a nutty depth and sweet aroma. Perfectly soft and buttery, these cookies are elevated with the addition of almond extract, making them a gourmet addition to any dessert table.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, cream the butter and sugar together until light and fluffy.
  • Beat in the eggs, one at a time, followed by the vanilla and almond extracts.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually mix the dry ingredients into the wet mixture until fully combined.
  • Scoop the dough into small balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
  • Flatten each ball slightly with the back of a spoon.
  • Bake for 10–12 minutes, or until the edges are golden.
  • Let cool on a wire rack and enjoy!

Notes

  • Start with a small amount of almond extract, as it’s concentrated, and adjust to taste.
  • For a variation, add dried cherries, slivered almonds, or cocoa powder to the dough.
  • Store in an airtight container for up to one week.
